Those of you who eat turkey on Thanksgiving know that their is always a lot of leftovers.
In our household all the white meat goes quick, but somehow we are left with a whole lot of dark meat.
The kids for one do not like it at all, and in all honesty I'm not a fan myself.
What can I do with the dark meat to make it taste better...hmmm? Was the question I asked myself.
I decided to create the classic "local" (people in Hawaii) favorite, the Locomoco, turkey style!
Locomoco is often served at plate lunch places as well many sit downs which is a hamburger patty topped with fried egg then drizzled with gravy over a bed or rice! Yes, its a mess but sometimes it tastes so darn delicious! Its the holidays so we can go a little bit more on our calorie intake right? hee hee.
Here's how to make the turkey take on it.
What you will need:
(turkey patty)
Shredded dark meat or white meat turkey
Leftover drippings, chicken broth, or water
1 egg
bread crumbs ( I used panko bread crumbs)
salt and pepper to taste
Put the shredded turkey and one of the liquids above, and cracked egg in a blender. I used a magic bullet.
Combine until smooth. Pour the mixture in a bowl. If it looks runny don't be alarmed. Add the bread crumbs until its a consistency that you can make patties out of. Pan fry with olive oil until golden brown.
In a separate pan make a few sunny-side-ups or eggs over easy, whichever you prefer to accompany the number of patties you made. Plate the rice, top with the turkey patty, then egg, and drizzle with leftover gravy!
Voila, a turkey locomoco!!
